This year at ANSWER Camp, we will be looking at the science behind traditional ways of preparing fish. Your first assignment is to bring a traditional fish recipe from home to share at camp! Think of you or your family's favorite traditional fish treat and a great memory connected to it.
Write the recipe below, and tell the story that goes with it (see the example below). You can also include special ways of salting, smoking, brining, marinating, or drying fish.
EXAMPLE
RECIPE NAME Hard Smoked Fish Strips
Ingredients and Materials:
- 20 Sockeye Salmon
- 1 Box Non-Iodized Salt
- 1 Potato
- 5 Gallons Water
- 18 Foot Long, Peeled Alder Logs
- 4 Small Sticks
- 1 Long-handled Spoon
- 1 Sharp Filet Knife
Directions:
- Remove the head and gut the fresh Sockeye Salmon.
- Filet the fish so the backbone, fins, and most of the ribs have been
removed. Remember to keep the tail connected.
- Carefully cut 4 to 5 strips down each of the side portion that is
connected to the tail.
- Fill a five-gallon bucket of water.
- Place a potato into the bucket.
- Add salt to the water. Mix until the potato floats. If the potato doesn't
float add more salt.
- Place the stripped fish in the salt brine for about 10 minutes.
- Remove the fish from the brine and drape the stripped fish by the tail
over a horizontal pole in the smoke house.
- Weave the small sticks between the strips so that the strips aren't
touching each other.
- Repeat the above steps until you have as many fish as you want to
prepare.
- Cold smoke the fish strips for about three days or until firm and dry.
- Vacuum pack or store in Ziplocs in the freezer until ready to share with
friends and family!
MY FISH TREAT STORY
In the summer I fish for Sockeye Salmon in Ugashik Bay. Sometimes I sell my fish to a tender called the Last Frontier. Usually when I show up and haven't seen the owners in a long time, they make my day by giving me some freshly smoked fish strips. The fish strips are a perfect snack after a long day of fishing. In order to thank her, I always give her a nice big beautiful fish!
